This is a Heart-Healthy recipe for Blueberry Cobbler. Not like those sinfully rich deep fat,
atrociously delicious Peach Cobblers of our mom's day.
Ingredients:
2/3 c. all purpose flour
1/2 c. sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt, if desired
2/3 c. skim milk
2 teaspoons canola margarine, melted
2 c. blueberries, cleaned and washed
Directions:
Preheat oven to 350 F.
In a medium bowl, combine the flour, sugar, baking powder and salt. Stir in the milk and mix the batter until it is smooth.
Using the melted margarine, grease the inside of a 1-quart casserole dish. Pour in the batter and sprinkle with blueberries over the top.
Bake the cobbler for 40-45 minutes, or until lightly browned.
